O is for Onion Bacon Pie

Welcome to my Food Recipe themed 2014 Blogging from A to Z Challenge

I have two things I just love, love, love to do, write books and cook. Stop by everyday to see my favorites recipes and a glimpse of one of my books.

O is for Onion Bacon Pie

Ingredients:

2 large sweet onions, chopped
12 ounces thick-cut bacon, cut crosswise into 1-inch pieces
1/2 teaspoon salt
2/3 cup baking mix (bisquick)
1/4 teaspoon pepper
1 cup milk
8 ounces cheddar cheese
4 large eggs, lightly beaten

In a large skillet, cook the bacon until crisp. With a slotted spoon, transfer the bacon to paper towels to drain. Pour out all but a light film of bacon grease. Add chopped onions. Sprinkle with the salt and cook until soft. In a bowl, combine the baking mix and pepper. Stir in milk, eggs and cheese. Add bacon and onion. Pour all into deep dish pie pan.
Bake at 325 degrees for 45 minutes, or until a toothpick inserted in the center comes out clean. Serve warm.

One Bashful Lady
by Brenda Williamson

One bashful lady discovers her dashing husband might be a traitor to their country.

Desmond Rawlington, Marquess of Dunsmore and seductive charmer, needs a Delacorte sister as a wife. When the eldest elopes, Desmond marries Ainsley only to find himself falling in love with the enchanting young woman, despite her quirky habit of hiding behind draperies.

Lady Ainsley Delacorte, the shyest person anyone has ever met, is nervous around servants, overwhelmed by the ton and forced into marriage. Her reluctance fades with her husband’s sinfully romantic touch, but she can’t forget he’s involved in a traitorous
plot to return Napoleon to power.

When Ainsley is caught with an incriminating letter she stole from her husband, Desmond intervenes. Will they face the gallows or can love save them?
