3 Tablespoons vegetable oil
1/2 cup orange juice
1/4 cup Tomato Paste
4 teaspoons ground Ancho Chile pepper
1 small finely chopped white onion
32 ounces taco cheese
10 - 8 inch flour tortillas
Cube chicken and cook in skillet in oil with onion. Add juice, paste, pepper and tomatoes with chilies. Simmer a few minutes until warm.
Lightly butter one side of 5 tortillas. Place butter side down on baking sheets. Spread shredded cheese over tortilla. Top with chicken mixture. Top with more cheese. Butter remaining tortillas and lay on top with butter side up.
Cook at 350 degrees for 30-45 minutes, until cheese has melted and tortilla begins to brown.
