Mushroom Munster Cheese Sandwich...YUM!

After watching the series, The Great Food Truck Race, hosted by Tyler Florence, with my son, we were inspired to make a better grilled cheese sandwich by the Roxy's Gourmet Grilled Cheese.

Not as complex or fancy, but my Mushroom Munster Cheese Sandwich is a delightful change from the standard American Cheese.



MUSHROOM MUNSTER CHEESE SANDWICH

(Ingredients for 2 sandwiches)

4 slices white bread
Margerine or Butter for coating
12 Slices Munster Cheese
4 Large White Mushrooms, sliced
Diced Jalopeno's (Optional)

Set oven broiler on high. Adjust rack in center of oven. Spring a baking sheet with non stick spray. Butter one side of bread very thinly, but thoroughly and place two slices butter side down on the baking sheet. Top each with two slices of cheese. Fry sliced mushrooms in a little olive oil. Spread hot mushrooms on the two slices of bread. Add Jalopeno's if desised. Top with 1 slice of cheese. Top with slice of bread, butter side up.
Place baking sheet with sandwiches under broiler. Leave door cracked open slightly and watch carefully. Once sandwich reaches desired toastiness, turn over and toast other side. Remove, let cool two minutes, slice and eat.
