Salmon Stuffed Deviled Eggs
Ingredients
8 large eggs
2 ounces smoked salmon
3 tablespoons minced fresh chives
4 tablespoons cream cheese
1 tablespoon mayonnaise
2 teaspoons lemon juice
1/4 teaspoon salt
1/8 teaspoon white pepper
Hard boil the eggs. Cool and remove shells. Cut in half lengthwise. Remove yolks to bowl. Combine yolks, salmon, chives, cream cheese, mayonnaise, lemon juice, salt and pepper, and blend with mixer until creamy. Add mayonnaise a little at a time if too stiff. Fill egg whites. Garnish with more minced chives.

Oh my goodness, you said eggs. I've been decorating, cooking eggs ALL DAY LONG. I swear I don't want to see another egg for a while (unless it's chocolate). I am, however, going to print out that recipe for later use. Thank you for being a part of the blog and I hope you have a very happy Easter.
